Kadai Chicken Recipe – Spicy & Authentic Indian Curry

If you are a fan of rich, aromatic, and spicy chicken curries, then Kadai Chicken is a dish you must try. Popular in North India and Pakistan, this recipe is prepared with freshly ground spices called Kadai Masala, along with onion, tomatoes, and capsicum that give it a restaurant-style flavor. It pairs beautifully with naan, roti, or steamed basmati rice.

Ingredients:

• 500g chicken (bone-in or boneless)

• 2 onions (sliced)

• 2 tomatoes (chopped)

• 1 capsicum (diced)

• 2 tbsp oil or ghee

• 1 tsp ginger-garlic paste

• 1 tsp red chili powder

• 1 tsp turmeric powder

• 1 tsp garam masala

• 1 tsp coriander powder

• Salt to taste

• Fresh coriander leaves (for garnish)

For Kadai Masala (roast & grind):

  • 1 tbsp coriander seeds

  • 1 tsp cumin seeds

  • 4–5 dried red chilies

  • 5–6 black peppercorns

Method:

  1. Prepare Kadai Masala – Dry roast coriander seeds, cumin seeds, dried red chilies, and peppercorns. Cool and grind into a coarse powder.

  2. Cook Chicken – Heat oil in a kadai, add sliced onions, and sauté until golden. Add ginger-garlic paste and fry.

  3. Add Spices – Mix in tomatoes, turmeric, red chili powder, coriander powder, and salt. Cook until oil separates.

  4. Add Chicken – Put chicken pieces and cook for 10–12 minutes until half done.

  5. Add Kadai Masala & Capsicum – Stir in the freshly ground masala and diced capsicum. Cook until chicken is fully done.

  6. Finish & Serve – Sprinkle garam masala, garnish with coriander leaves, and serve hot

Serving Suggestions:

• Serve with butter naan, tandoori roti, or steamed basmati rice.

• Add a side of onion salad and raita for a complete meal.
