Introduction:

Chicken Malai Tikka is a popular North Indian appetizer loved for its soft, creamy texture and mild spices. Perfect for parties, BBQ nights, or family dinners, this dish is made by marinating boneless chicken pieces in fresh cream, cheese, and flavorful spices before grilling them to golden perfection.

Ingredients:

• 500g boneless chicken (cut into cubes)

• 4 tbsp fresh cream (malai)

• 2 tbsp hung curd (thick curd)

• 1 tbsp grated cheese

• 1 tbsp ginger-garlic paste

• 1 tbsp lemon juice

• 1 tbsp green chili paste (optional)

• 1 tbsp cornflour

• ½ tsp garam masala

• ½ tsp black pepper powder

• Salt to taste

• 1 tbsp butter (for grilling)

Marination Process:

1. In a mixing bowl, add hung curd, fresh cream, grated cheese, ginger-garlic paste, lemon juice, green chili paste, black pepper powder, and salt.

2. Add cornflour for binding and mix well until smooth.

3. Add chicken cubes and coat them well in the marinade.

4.Cover and refrigerate for at least 2 hours (for best taste, marinate overnight).

Cooking Method:

• On Tandoor/Grill: Preheat and grill the chicken pieces until golden brown and cooked inside, basting with butter for extra flavor.

• On Tawa/Pan: Heat a non-stick tawa, add butter, and cook marinated chicken pieces on medium heat until golden and fully cooked.

Serving Suggestion:

Serve hot with green chutney, onion rings, and a sprinkle of chaat masala for an authentic taste.
