    Malai Kofta Recipe – Restaurant Style

Malai Kofta is a rich and flavorful North Indian curry made with soft paneer-potato balls (koftas) served in a smooth, creamy, and mildly spiced gravy. This royal dish is often found in Indian restaurants and is perfect for special occasions or festive dinners.

Ingredients

   For Kofta:

• Paneer (cottage cheese) – 200g (grated)

• Boiled potatoes – 2 medium (mashed)

• Cornflour – 2 tbsp

• Salt – to taste

• Garam masala – ½ tsp

• Chopped green chilli – 1

• Chopped coriander leaves – 2 tbsp

• Oil – for deep frying

For Gravy:

• Onion – 2 medium (chopped)

• Tomato – 3 medium (chopped)

• Ginger-garlic paste – 1 tbsp

• Cashew nuts – 8-10 (soaked in warm water)

• Fresh cream – ½ cup

• Turmeric powder – ¼ tsp

• Red chilli powder – 1 tsp

• Coriander powder – 1 tsp

• Garam masala – ½ tsp

• Butter – 2 tbsp

• Salt – to taste

• Water – as required

Instructions

Step 1 – Prepare the Koftas

1. In a mixing bowl, combine grated paneer, mashed potatoes, salt, garam masala, green chilli, and coriander leaves.

2. Add cornflour and mix well to form a dough-like mixture.

3. Shape into small balls.

4. Heat oil in a pan and deep fry the koftas until golden brown. Keep aside.

Step 2 – Make the Gravy

1. Heat 1 tbsp butter in a pan. Add onions and sauté until golden brown.

2. Add ginger-garlic paste and cook for a minute.

3. Add chopped tomatoes and cook until soft.

4. Add soaked cashews and blend the mixture into a smooth paste.

5. In another pan, heat 1 tbsp butter. Add the paste, turmeric, red chilli powder, coriander powder, and salt.

6. Add water to adjust consistency and let it simmer for 5-6 minutes.

7. Stir in fresh cream and garam masala. Mix well.

Step 3 – Assemble the Dish

1. Place koftas in a serving bowl.

2. Pour the hot gravy over them.

3. Serving Suggestions

Malai Kofta pairs best with butter naan, tandoori roti, or jeera rice. Serve it hot for the best taste.Garnish with cream and coriander leaves.
