Ingredients:

• 250g Bhindi (Okra), washed and chopped

• 2 tbsp Mustard Oil (or any cooking oil)

• 1 tsp Fennel Seeds (Saunf)

• 1 tsp Mustard Seeds (Rai)

• 1 tsp Nigella Seeds (Kalonji)

• 1 tsp Fenugreek Seeds (Methi Dana)

• 1 tsp Cumin Seeds (Jeera)

• 1 tsp Turmeric Powder

• 1 tsp Red Chili Powder

• 1 tsp Coriander Powder

• ½ tsp Garam Masala

• Salt as per taste

• 1 tbsp Lemon Juice or Mango Powder (Amchur)

Instructions:

1. Prepare Bhindi: Wash okra and pat it completely dry with a kitchen towel. Chop into medium-sized pieces.

2. Heat Oil: Heat mustard oil in a pan until it starts to smoke, then lower the flame.

3. Add Spices: Add fennel seeds, mustard seeds, nigella seeds, fenugreek seeds, and cumin seeds. Let them splutter for a few seconds.

4. Cook Okra: Add chopped bhindi and sauté on medium heat for 2-3 minutes.

5. Add Masalas: Mix turmeric, red chili, coriander powder, and salt. Cook until bhindi turns soft and non-sticky.
