For Chicken Marination

• 300g boneless chicken (small cubes)

• 2 tbsp cornflour

• 2 tbsp all-purpose flour (maida)

• 1 tsp ginger-garlic paste

• 1 tsp soy sauce

• ½ tsp black pepper

• Salt to taste

• Oil for frying

For Manchurian Sauce

• 1 tbsp oil

• 1 tbsp chopped garlic

• 1 tbsp chopped ginger

• 2 green chilies (slit)

• ½ cup chopped onion

• ½ cup chopped capsicum

• 1 tbsp soy sauce

• 1 tbsp red chili sauce

• 1 tbsp green chili sauce

• 1 tbsp tomato ketchup

• ½ tsp vinegar

• 1 tsp black pepper

• Salt to taste

• 1 cup water (for gravy)

• 1 tbsp cornflour slurry (1 tbsp cornflour + 3 tbsp water)

• Spring onions (for garnish)

👩‍🍳 Step-by-Step Instructions

Step 1: Marinate & Fry Chicken

1. In a bowl, mix chicken cubes with cornflour, maida, pepper, salt, soy sauce, and ginger-garlic paste.

2. Coat well and rest for 10 minutes.

3. Heat oil and deep fry or shallow fry until golden and crispy.

4. Keep aside.

Step 2: Prepare the Manchurian Sauce

1. Heat 1 tbsp oil in a pan.

2. Add chopped garlic, ginger, and green chilies. Sauté till aromatic.

3. Add onion and capsicum. Stir fry for 1–2 minutes on high flame.

4. Add soy sauce, red chili sauce, green chili sauce, and ketchup.

5. Add salt and pepper.

6. Pour 1 cup water (only for gravy version).

7. Add cornflour slurry to thicken the sauce.

Step 3: Combine Chicken with Sauce

1. Add the fried chicken pieces into the prepared sauce.

2. Mix well so the chicken absorbs all flavors.

3. Cook for 1–2 minutes.

4. Garnish with spring onion greens.
